I have tried lots of default replacement skins for female but none of them are showing up in my game...  Does anyone have any suggestions of what default replacement non barbie skins actually work I have all EXP plus fun packs...  Next question how do you change your sims eye colour during the game as my sim has changed from having blue eyes to grey....

Make sure you have the skin packages in the Downloads folder.  It has to have the capital "D".  My Documents\EA Games\The Sims 2\Downloads.

In game you can't change the eye color.  Once a character is created the only way is with SimPE.  Although it's been so long since I've used the Plastic Surgery reward for Show Business, that might have the ability to change eye color.  But I don't remember that.

You can use contacts to cover default eyes while in game, they can be found under masks. Here are some from MTS2.
